I will be in the Dune du Pilat area mid May through mid June 2018: can anyone recommend a private paragliding instructor, or school, and any idea of someone with an extra room I can rent?

I can recommend you "Wagga School". There are numerous campsites along the dune where you could put your tent or rent a mobilhome.
